A celebratory tour for 1,700 middle school crossing guards, accompanied by their teachers, police escorts, and sponsors, traveling all the way from East Tennessee. The event’s catering success hinged on clear coordination, communication and execution, as the large group arrived on a tight timeline, escorted by police, with a highly anticipated private tour of the U.S. Capitol scheduled immediately after lunch. The fundamental challenge was delivering a rapid, high-volume catered meal service that would delight the guests without compromising the strict travel schedule.

Dixie Bones implemented four double sided buffet serving lines. The menu was a crowd-pleasing, efficient choice, featuring succulent BBQ pork, comforting macaroni and cheese, crisp coleslaw, fresh buns, and ample bottled water.

From the moment the motor coaches pulled up, the entire assembly of young crossing guards and their chaperones navigated the buffet lines and were fully seated and enjoying their meals in just 15 minutes.
